Working hard, and learning my trade in several establishments, some overseas and some right here in Scotland. Most recently I worked for a cruise company called Seaborne, and then a restaurant named Six by Nico here in Edinburgh.
I love the family feel between each member of staff, I think it is very unique this way in that it is very hard to come across a place where everybody is reading from the same script.
Mostly I am enjoying writing menus, and experimenting with food and dishes, and trying to drive the standard of food higher and higher. And to create something that will hopefully excite guests and to give them an incredible experience.
I love my lime cured mackerel dish, the freshness and colour of the mackerel itself, and the vibrant colours that come with the whole dish.
A perfect day for me would be to cook a nice lunch for my girlfriend and me at home, then to head out for a walk around Edinburgh’s city centre. Followed by a movie at the Dominion theatre, a dinner at any number of the vast amount of nice restaurants Edinburgh has to offer, and then to top off the day, a couple of hours and drinks at The Stand comedy club.
I am very fond of the Kitty Oshea’s Irish bar as I have a lot of fond memories with my friends there,and there is always live music on the weekends. And my favourite restaurant in Edinburgh would be Soba, I am very partial to abit of street food and their street food menu never fails.
